The ramen noodles are made with a mixture of semi-wholewheat and brown rice flour, then steamed rather than fried like many instant noodles. Ginger, garlic and a touch of cayenne pepper give the soup a touch of heat. For one serving of noodles, bring 400ml water to the boil in a saucepan. Add the noodles and cook for 4 minutes, stirring occasionally. When they’re nearly done, add the sachet of soup paste and stir well to dissolve. Serve immediately, and garnish with spring onion if you like.
